Delirium Tremens: The Story Behind the Pink Elephant
The history, the taste, and why this Belgian icon is the most ordered beer at Bridge Brew Bar Naples. A deep dive into one of the world's most famous ales.
The most famous pink elephant in craft beer
Walk into Bridge Brew Bar on any evening and you'll notice something: a striking number of people are drinking from the same glass. It's the Delirium Tremens glass — unmistakable with its pink elephant logo and distinctive tulip shape. This Belgian strong ale has become the single most ordered beer at our bar, outselling every other tap month after month. And it's not just popular at Bridge — Delirium Tremens is recognized as one of the greatest beers ever brewed.
But what makes this particular beer so special? Why does a Belgian ale from a small-town brewery command such devotion from craft beer fans worldwide? The answer lies in a combination of history, craftsmanship, and a flavor profile that, once tasted, is impossible to forget.
The brewery: Huyghe, since 1654
The story of Delirium Tremens begins in Melle, a small town near Ghent in the Flemish region of Belgium. The Huyghe Brewery has been operating on this site since 1654, making it one of the oldest active breweries in Belgium. For centuries, it produced respectable but unremarkable regional beers — solid, traditional, and largely unknown outside of East Flanders.
Everything changed in 1988 when brewmaster Leon De Baets created a new recipe: a strong blonde ale with a character unlike anything the brewery had produced before. They named it Delirium Tremens — a deliberately provocative choice that references the hallucinations caused by severe alcohol withdrawal. The Italian government once tried to ban the beer's sale due to the name, arguing it promoted alcoholism. The publicity from the controversy only made the beer more famous.
The taste: what to expect
Delirium Tremens is a Belgian Strong Pale Ale at 8.5% ABV. It's strong, but it doesn't taste heavy — and that's part of its genius. Here's what you'll experience when you take your first sip:
The nose
Before you even drink, the aroma tells you this is something special. Fruity esters — banana, citrus, and a hint of dried apricot — rise from the glass, mingled with subtle spicy notes from the Belgian yeast and a faint honey-like sweetness from the malt.
The first sip
The initial impression is surprisingly approachable for an 8.5% beer. A gentle sweetness hits first, followed quickly by the complexity that makes Delirium legendary: layers of fruit, spice, and malt that unfold across the palate. You'll taste banana and clove from the yeast, citrus peel from the hops, honey and biscuit from the malt, and a peppery warmth that builds gradually.
The finish
The finish is dry and slightly bitter — a crucial element that prevents the sweetness from becoming cloying. The carbonation is lively, almost champagne-like, which keeps the beer refreshing despite its strength. The alcohol is well-hidden; you feel warmth, not burn. And then, inevitably, you take another sip.
The danger
Here's the thing about Delirium Tremens that every bartender at Bridge will warn you about: it drinks far too easily for 8.5%. The combination of smoothness, effervescence, and complex flavor makes it dangerously drinkable. Two glasses feel like one. Respect the pink elephant.
Awards and recognition
In 2008, Delirium Tremens was named "Best Beer in the World" at the World Beer Championships in Chicago, beating hundreds of competitors from dozens of countries. It has since accumulated dozens more awards and consistently ranks among the world's top beers in industry publications and enthusiast polls. For many craft beer drinkers, it's the beer that first opened their eyes to what beer can truly be.
How we serve it at Bridge
At Bridge Brew Bar, we serve Delirium Tremens on draft — and the difference between draft and bottled Delirium is significant. Draft Delirium is creamier, with a silkier mouthfeel and a fresher hop character that you simply can't get from a bottle. The pour itself is a small ceremony: the proper glass, the right angle, the careful fill to create a dense white head that releases those incredible aromas.
We serve it at cellar temperature — around 8-10°C — which is warmer than a typical lager but cooler than room temperature. This range unlocks the full flavor complexity without numbing your palate. If you've only ever had Delirium cold from a fridge, you haven't had the full experience.
Pair it with food
Delirium's complex character makes it a surprisingly versatile food partner. At Bridge, we recommend pairing it with our charcuterie board — the cured meats match the beer's fruity and spicy notes beautifully. Our homemade polpettine also work well, especially with the spicier dipping sauces. Browse our full food menu for more pairing ideas.
Why it's our best seller
Delirium Tremens outsells every other beer at Bridge for one simple reason: it bridges the gap. It's impressive enough for the craft beer connoisseur who's tried hundreds of Belgian ales. It's accessible enough for the curious newcomer who usually drinks lager. It's strong enough to make a single glass feel like an event. And it's delicious enough that everyone — regardless of their beer background — finishes their glass and considers ordering another.
That versatility is exactly what we look for in every beer we put on our draft lineup. Delirium just happens to do it better than almost anything else in the world.
